Our New Tradition: Pancake Sundays



Occasionally, on Sundays, I will mix up some pancakes.  This is always exciting to Josh, so much so, that I decided it should become tradition.  Usually, we put on a good movie, like Aliens, or Jurrasic Park, or this past weekend, Frozen, and I will get to cooking.

We get our recipes from all over the place, because it's not something I can make up.  Often, we look to Post Punk Kitchen or NeverHomeMaker, but I have fallen in love with all things from Minimalist Baker.  Everything I make from this blog is fantastic, so I pinned every pancake recipe they've posted on my Vegan Breakfast Club Pinterest board, and we're going to make all of them.

Last week was Chocolate Chip Oatmeal Cookie Pancakes.  Holy. Crap.








My photographs are not nearly as beautiful as the ones you see on Minimalist Baker, but it doesn't matter, because I snapped them super quickly so I could shove these into my mouth.

They were rich, like eating a cookie for sure.  I didn't make them completely gluten free, but there is very minimal flour in these.  We put a teeny bit of maple syrup on top, and that just enhances how good they are.  What I really love about all these recipes is they only make a few pancakes, so even if they're rich, you're just getting a little taste.



This Sunday, we went with Blueberry Muffin Pancakes.  Now, we have a new favorite!






I had to, of course, make them into a snowman, since we were watching Frozen.  To my horror, we realized the night before that we were out of maple syrup.  Luckily, I happened to be talking to Mama V, and she told me to put some frozen berries in a bowl for a few hours with lemon juice and a couple spoonfuls of sugar.  Syrup problem solved!  My mother is a genius.




After they released their juice, I mashed them with a potato masher, and Josh cooked them on low on the stove for about 10 minutes.


I'm loving this tradition!  Ideally, I would like a long run or a good hike to go along with these pancakes, but that did not happen this weekend.  They did fuel 4 hours of yard work last weekend, so that's positive!
