Feeling Under the Inclement Weather


Today, I woke up feeling pretty crappy.  It didn't help that Little Rock was getting blanketed by a light sheet of ice.  The weather wasn't really as bad as everyone was making it out to be, but it was still dreary and cold.  I walked around all day feeling like I had something stuck in my throat, and tonight it hurts more.  So, it's a quick post then off to bed for this one.  I did manage to whip up an amazing dinner with yesterday's leftovers.








First, blueberries look so weird when blended with spinach.  Second, let's talk about this carrot cake smoothie.  Holy crap.  It was amazing!  I saw this on pinterest yesterday, and I knew I would have to make it.  I simplified it a bit.

Breakfast Smoothie:  2 scoops vanilla protein powder, 1/4 cup blueberries, 1 tbs chia seeds, 2 cups spinach (blend with water)

Lunch Smoothie:  1 scoop vanilla protein powder, 1 cup coconut milk, 2 carrots, 1/4 cup rolled oats, 1 tsp ground cinnamon

Snack:  almonds and an Arbonne chew, 2nd snack hummus and carrots




When I got home, my throat was killing me and I was feeling really run down.  I needed to get a 4 mile run in, but I knew I'd have to do it at the gym, and the icy roads didn't make me feel incredibly motivated.  So, I settled on the couch with a hot cup of herbal tea and lemon and snacked on a few carrots before I made up dinner.


I'm still not great about refraining from putting food in my mouth while I cook dinner.  Sure, the food is healthy and low calorie, but I really would like to sit down to my meal without having snacked the whole time I cooked.  My diet is clean, but my habits still aren't great.  I will continue to work on this.





Dinner was a vitamin packed veg fest!  I warmed up the cauliflower fried "rice" I made last night, with some added collard greens.  I topped it with lots of lime juice and avocado.  This dinner was delicious, filling and nutritious, and it was just what I needed to fight whatever germs are trying to wreak havoc on my system.

Now, I'm off to roll up in a giant snuggy and cuddle my cat.  Stay warm!
