Creamy Lentil Daal

** We interrupt this Arbonne detox to bring you a recipe from a few weeks ago.  It was yummy, and I wanted to share!

A few weeks ago, I really wanted to try out my new bread maker and whip up some lentil soup.  Unfortunately, I'm not the best at reading directions, and the soup turned into a daal.  It was delicious, none-the-less, and it was enough food to last for a week.

I sauteed an onion and 4 garlic cloves in my cast iron pot, then added about 6 cups of vegetable stock.  That's when things went a little wrong.  Apparently, you are supposed to use 1 cup of the soup mix per 4 cups water.  I poured in the whole bag.  So, once I let the soup cook for awhile, I realized it wasn't going to be soup at all.

I waned the soup/daal to be very creamy, so I blended 1 cup soaked cashews, 1 can hot rotelle, and 1/2 cup nutritional yeast in the Vitamix.

I also tried to whip up some bread in my new bread maker, but that was a bit of a disaster.  Apparently, you need bread flower to make bread.  I used this recipe, but it did not turn out well.  We still used it.  Waste not, want not.

I served up dinner with a salad and the semi-failed bread.  This makes a TON of daal, so I'm not exactly endorsing my recipe.  I think the soup mix would be great, if you follow the directions.
