Arbonne Detox Day 4, Vegan Stuffed Peppers


Today was great!  I know that when people follow "detox diets" they have a tendency to feel crappy the first couple days.  I have moments when I don't feel fantastic, but it isn't as bad as feeling overly full from eating junk food.  I'll take a little caffeine withdraw any day.

I had basically the same breakfast, snacks and lunch as yesterday.  I took lunch to go over some wedding planning stuff.  That's pretty fun!  Don't worry, this isn't going to turn into a wedding blog, but I'm trying to find special vendors locally that will do an amazing vegan spread, vegan wedding cake and local flowers.  So, I'll keep you posted on what I'm finding around Little Rock.








When I got home, Josh handed over one of our late Christmas presents to ourselves.  He got an under quilt for his hammock, and I got this..


So excited!!  For our price range and use, we picked a 50 mm lens with an f/1.8.  I was really excited, so I really wanted to play with it.  I laced up and went on a 2.5 mile run first, then got home and started cooking!





I had a lot of fun shooting my reflection in this bowl.  I'm a dork.  This recipe was just a "what do I  have in the fridge" kind of thing, but it was good!


Vegan Stuffed Peppers

Ingredients
4 small green stuffed peppers

For the filling:
1 zucchini, grated 
3 green onions, chopped
1/2 c garbanzo beans
1 can black beans, rinse
1 cup cooked brown rice
3 limes, squeezed over mix
a couple cracks of sea salt
1 tbs cumin
1 tbs paprika
pinch of cayenne pepper


  • Cut the top off peppers and set aside.  (I used them in a salad).
  • Take out seeds and inner part.
  • Mix all the ingredients for the filling together.
  • Place in peppers.  (I had a little left over, so it would depend on your pepper size)
  • Bake in the stuffed peppers in the oven at 400 d F for 25 minutes.



I served the stuffed peppers with a small salad, dressed with a little olive oil and lemon.  Everything was delicious.  It was clean and light, but still hearty enough to re-fuel after my run.






I am feeling so fantastic eating like this!  These are filling, and I will have to say, I ate both.  I probably could have just handled one.  Live and learn...

  1. So healthy... still can't find inspiration to eat THAT healthy, just try some raw things a day. May I ask how do you find inspiration to drink this healthy? Thank you.

    1. my body loves it when I do! I definitely have had my fair share of vegan junk food, but that leaves me overweight and unhappy. This year, I'm focusing on fueling my body to the best of my abilities! :D

  2. Whoa, is that a stuffed pepper pan???? I've never seen one of those, but I NEED one now! Where'd you find that?

    1. right?! i got it for christmas from my mom last year, and i think this might be the first time i've ever used it! it's AWESOME! i'm not sure where she got it. walmart? haha i'll ask her

    1. Protein powder, carrots, spinach, hemp seeds, chia seeds, and maca. It's mixed with water. :D
