Butternut Squash and Lentil Coconut Soup


Tonight, I came home and remade the Lentil Squash Soup I made in New Orleans.  Josh liked it, and I think I'll put it in rotation.  I am going to be focusing more on simple foods with just a few ingredients, and this meal is quick and easy!

Today was my first day back at work, so I didn't have a lot of stuff ready at the house to bring to work.  So, I grabbed some trail mix and had a veggie burger with my co-workers at lunch.  I spent the afternoon doing color studies!






I busted out the yoga mat and did a really relaxing series after work, and Bodhi decided to join me.


After yoga, I headed to the kitchen to try to recreate my soup, and I did an ok job.  I think I added more lentils this time around, so the soup was really thick.













I also made up some Low Carb Tofu Scramble, so I will have healthy lunches for this week!



Yum!  I'm feeling optimistic today.  I'm ready to start half marathon training and get out of this funk!

    1. Thanks! She knows it too. I like it when it's cold outside, because she gets extra cuddly. The soup was yummy!
