Grilled Pizza and Zucchini Salad


Friday, our friends Erin and Phillip invited us over for grilled pizza!  We went camping with them a few years back and did grilled pizza in a dutch oven, but that is as far as my experience goes.  I have come to realize that it's one of my favorite things!!

Since E+P were hosting us, I thought I would bring over some cookies and a salad.  Unfortunately, I ran out of sugar, and the cookies didn't turn out great.  The salad, on the other hand, was pretty good.




Light and Lemon-y Zucchini Salad

Ingredients:

3 raw zucchini, spiralized
1 1/2 small apples, chopped small
1 red pepper, chopped small
4 stalks green onions, chopped small
1/2 cup chopped carrots

Sauce:
1 tbs chopped ginger
zest from one lemon
1/3 cup lemon juice
1 tbs rice wine vinegar
1 tbs tamari or soy sauce
1 tsp dried thyme
1 tsp white miso (optional)
1 tbs olive oil
2 tbs maple syrup
salt and pepper

Put it all together and give it a good shake.  Let sit in the oven for at least 30 minutes.



When we got to E+P's, we got to roll out our dough and make our own pizza.  They picked up the dough from Vino's, which is an awesome beer and pizza place right down the street.  Vino's is a Little Rock staple, so if you're in town, pop over for one of their beers.

For my first pizza, I piled on cashew cream, corn, butternut squash, potatoes, onions and daiya cheese.



My pizza was the first off the grill, and it came out a little toasty on the bottom, but it was still really good and I ate the whole thing.  Grilled pizza is so fun to do in a group.  We stood around the kitchen talking and making pizzas, which was awesome.

For the second pizza, Erin and I (being the veg heads) split one that she made.  It has all sorts of great vegetables and starches.





As if a pizza and a half wasn't a ton of food, she also made up an apple dessert pizza.  Oh man, that was the best.  It was halfway through the apple pizza that we all realized we hadn't eaten any salad.  We had a couple bites for good measure.
