Angela's Vegan Lasagna

I am stressed and over worked today, but dinner was delicious.  In between construction document drawing yesterday, I managed to pull together some vegan lasagna.  This is a recipe from Oh She Glows that I have made many times, and it's always delicious.  Josh and I are both swamped at work and need to work at night this week, so I wanted something easy I could heat up for dinner.

I also made some Thanksgiving Stack Salads, but you'll have to wait for tomorrow for that recipe.

Since I'm having a problem working out, I am trying really hard this week to keep my nutrition on point.  This morning, I made juice with an apple, lemon, cucumber, spinach, green peppers and celery.  I love green juice in the morning.  I sipped on this a little bit at a time, and it lasted until about 10 am.

For lunch, I decided to go with the office.  We're all on deadline, and I thought a little socializing would do me some good.  It was actually nice to get out of the office and relax for a little bit, but most of the day was me constantly stressing out.

I had a grilled veggie wrap and broccoli at Bar Louie.  I had a clementine when I got back to the office, and at around 3, I snacked on some almonds.

By the time I got home, I was majorly stressed out.  I was in too much pain to go to yoga, and I just felt horrible.  My girl, Devon, has sent me a care package, and it made me feel wonderful and loved.  It was exactly what I needed.

She sent me lip gloss, a yoga magnet, some awesome pictures and a workout DVD.  You rock, Devon!  (I know you read.. hehe)

Dinner was lasagna, and it was so yummy.  I took a few shots yesterday while I was making it, and it turned out pretty good.  I love eggplant.

I'm staying positive this week, even if I don't feel good.  It's too easy for me to spiral into negative self thoughts and destructive eating, so I am going to focus on my diet.


  1. Sorry to hear you are so busy and stressed right now! Hopefully everything will level out soon for you guys. That lasagna looks SO GOOD!! I really need to try it out soon!

    1. thanks girl! i am hoping it levels out, for sure. it is ALWAYS crazy this time of the year for us. the lasagna is amazing, and it's definitely an easy way to get dinner made for the week. now if i can just convince josh to eat the same thing every day, i'll be set!

  2. Sorry you don't feel good! I totally understand the pain of not being able to work out 'cause you're in pain. :-(

    Also, we have a Bar Louie in Memphis. I had no idea they had a vegan friendly menu item. I'll have to eat there one day.

      There aren't a ton of options at Bar Louie, but there are a few. Their grilled veggie wrap is really good. You have to ask for no cheso fresco and no mayo, but there is hummus, avocado and balsamic to make it amazing. I like their steamed broccoli. They have a hummus plate that you can take out the taziki and it's pretty good. We used to eat there a lot at lunch, but I got kind of bored having the wrap every time. They also have a portabello sandwich and you can add portabellos to their salads.
