Turnip and Tempeh Curry


Saturday night, my sister, Casey, and I had a sister scary movie night!  In honor of this, I decided to make up a delicious batch of turnip curry.



We put on Nightmare Before Christmas and started chopping veggies.  Casey and I used to watch that movie from weeks before Halloween until Christmas.  It's great.  We also got in some Tree House of Horror and other spooky videos.  I love Halloween!


Even Bodhi wanted to join us for a glass of wine.  She was very intrigued.


Turnip and Tempeh Curry

Ingredients

1 butternut squash
1 tbs olive oil
5 small turnips
1 hunk of ginger, about 3 tbs chopped
1/2 head of garlic, pressed
1 yellow onion, chopped
2 poblano peppers
1 package of tempeh, cubed
1/2 can pumpkin puree 
2 cans of full fat coconut milk
2 cups of vegetable stock
3 cups of chopped kale
2 tbs curry powder
1 tbs dried chipoltle pepper (optional)
cracked pepper

1 cup jasmine rice and 1/2 cup chopped basil for assembly





  • Prepare all of the vegetables by peeling them and chopping them into cubes.  For the butternut squash, cut in half, scoop out the inside, peel the outside, and cut into cubes.
  • De-seed the poblano and chop into small pieces.  Optional:  you can roast the pepper first.  
  • Peel the garlic and chop into small pieces.
  • Heat your pan on medium high.  Add oil.
  • Sautee onion until translucent.  Add in pressed garlic and ginger.
  • Add coconut milk.
  • Add in the root vegetables and poblano peppers.
  • Turn the pot up to boil.
  • Add vegetable stock and tempeh.
  • Let boil for 2 minutes.
  • Reduce heat and let simmer for 20 minutes.
  • Add in pumpkin, tempeh and spices.
  • Cook for another 15 minutes, then take off heat and let sit for 10 minutes.
  • While the curry is cooling, prepare the jasmine rice by package instructions (I used the rice cooker.)
  • Add rice to bowl, the pour curry over, and top with fresh basil.  
  • Add sriracha if the spice level isn't to your liking.
  • Enjoy!

It was yummy and filling, great for a cold night.

Thanks for everyone that has been keeping up with my depressed ramblings lately.  I'm feeling a lot better, and although I had another procedure today that will leave me in more pain, I'm going to try to stay super positive.  It should be soon that it's all over, so that's something to look forward to.  Hopefully I'll be able to get in some good workouts this week.  Stay tuned for Monday's food recap.
