Mofo No Mo

Vegan Mofo is over, but it was loads of fun!  It was my first year, and I went over my 21 post goal.  My theme was consistency, and I think I started out really well and kind of fizzled a little.  Because I was sidelined by some health issues, I went back into some bad eating habits.  No worries, though, because being negative to myself only fuels my funk.  I'm back to healthy, happy, light eating, and I'm feeling great!

I started my Monday morning off with a 2.4 mile run and some pumpkin granola.  I need to add more fruits and smoothies into my breakfast routine, but for something quick, cereal is my go to.

Sunday night, I cooked up a huge batch of kale chips (and brussels sprouts and curry roasted carrots... noms), and I had a little bit leftover for my lunch.  The wrap is hummus, daiya cheese slices, and veggies.  It was yummy and light.

I had my last camera class at Bedford, and I actual won best photo of the night!  Thanks, Bodhi, for being my model!  I had such a good time in this class, and I really learned the basics of DSLR photography.  I am excited to know more about my camera, and I'm having tons of fun photographing things.

A few weeks ago, I ordered a vegetable spiralizer.  I have to admit, I have been a little afraid to use it, but after watching this video from The Real Meal, I was excited to give it a try.  It was so easy to use, and it made much better zucchini noodles than my grater.

I'm trying to include more raw, fresh foods into my diet, and this bowl was perfect for that.  I used 2 small zucchini, 2 slices of tofu that I marinated in soyaki, a mixture of soyaki and peanut butter, shredded carrots, almond slivers, sriracha and lime juice.  It was perfect!  I would recommend to toss the noodles in a big bowl, using the most minimal amount you can (it gets soggy), then place in your bowl.  Some cilantro or basil would have been perfect with it.
