Hearty Vegan Dinner Bean Bowl




It's been awhile since I made anything in the kitchen other than warming up some leftovers or frozen food.  So, I really wanted to get in the kitchen Monday night and have some fun.  What I came up with was a little bit leftover, a little bit baking and a little bit beer.  More on that in a minute.




I munched on a luna bar and sipped my green tea while admiring the pretty Monday morning sky.  Feeling in a lot less pain, I had a good outlook for the week.  Lunch was a hummus/vegan cheese roll up, and apple, and a container salad.  I'm not obsessed with these salads, and you'll see many more before the week is out.




Today's salad was spinach, hearts of palm, carrots, and slivered almonds.  I put in some dressing and gave it a good shake!



After work, I headed to Kroger to get supplies for my cooking adventures.  When I got home, I decided I needed a snack.


Roasted Chickpeas and Container Salads


I tossed 2 drained and rinsed cans of chickpeas with a drizzle of olive oil and some curry powder, then I roasted them in the oven for 30 minutes.



Once the chickpeas were cooled, I spiralized some zucchini and made up container salads!  More on that in the coming days.

Pumpkin Chocolate Chip Muffins


A few days ago on pinterest, I spied these muffins by Minimalist Baker.  I knew I had to make them, so I whipped up a batch.  I thought some walnuts would do well in them too, and I was right.




These were delicious, and I think they'll make a nice breakfast treat!

DINNER





We had some leftover vegan hot dogs from camping, so I thought what better than beans and franks?!  I added some beer and vegan bbq sauce (Stubbs) to a can of vegetarian baked beans.  I also whipped up a skillet corn bread from Veganomicon.  For the hot dogs, I just cut them up and warmed them up in the pan.  Then, it was time to assemble.

Corn bread wedge (cut in half) + beans + franks = delicious.



Warning:  This meal is not for the faint of stomach.  It was SUPER filling.  All the ingredients are so dense.  This was great for Josh, who ran 8 miles before dinner, but not so great for me, who is still not working out because of pain.  My stomach wasn't so happy with me after.  I should have cut my serving down by about half.  It was very tasty, though.

I found out some super exciting news the other day.  There is a LITTLE ROCK VEGAN DINNER CLUB!  I found this out just in time to attend a fixed price dinner tonight!  If you're interested, it will be at Cafe 5501 at 7 pm.  Here is the menu:


I am really really REALLY excited.  I hope to meet some other Little Rock vegans, and I'll report back tomorrow!

  1. Man, I really wish we could go to this, but we have other plans! We have been otherwise engaged the other times they've met up too. Hurumph. Maybe next time! I'm anxious to hear all about it! Have fun!

  2. well, shame on me for thinking all luna bars are vegan. i just read the ingredients on the one i had for breakfast. milk. be warned!
