Easy Squash Risotto

I had a lovely Friday, full of running, yoga and good eats.  For dinner, I made one of my favorite dinners, risotto with squash and veggies.  Usually, on Fridays, I tend to fall into bad eating habits.  I usually spend my afternoon eating a big too much, but today I kept it in check.

I started my morning off with a good post-run breakfast, cereal and banana.

I wasn't feeling terribly well all morning, but I put on a happy face and got ready for noon time yoga.  I'm so glad that I did.  The class was wonderful, difficult, and completely relaxing.

I went back to the office after yoga to eat my lunch and finish up a few things.  I brought a nice salad and an eggplant wrap.

We had made plans to go backpacking this weekend, but the forecast is rain.  I was pretty sad, but then I started thinking about soup to go along with the rain, so I ran to Kroger for supplies.  I picked up a little snack while I was there, too.

For dinner, I whipped up a meal that Josh and I eat a lot.  I get a box of vegan risotto, an acorn squash and some sort of side veggie (steamed green beans tonight), along with our favorite garlic biscuits.  The recipe for the biscuits is one I got from VegNews forever ago, and I make them all the time.

I usually stuff the risotto inside my squash, but this time, I mixed it all together once the risotto was cooked.  I added kale and some slivered almonds.  It was amazing.

For the squash, I cut it in half, scooped out the seeds, and put it face down in a pan with a little water.  I cooked it for about 40 minutes at 375 degrees F.  The way to tell if they're cooked is to poke it with a fork and see if it's soft.  I let these rest on the counter while the risotto was cooking.

I set up our little dinner space in the kitchen.  I thought I'd give you a little tour.  We really should use our dining room table more, but this is where we eat every night.

  1. So you just stir in the squash at the end of cooking the risotto? Looks yummy. when do you add the kale?

  2. yes, sorry. i let the risotto cook, adding the kale about mid way. then, when it's cooked all the way, i stir in the squash. it's yummy!
