Vegan Mofo Daily Recap: Day 1

Today, I kept thinking "Be Consistent!"  When I wanted that extra helping tonight, I thought, "What would happen if you CONSISTENTLY had that extra serving?"  It also helped me to stop putting food in my mouth while I was cooking.

So often, as I rush home, any little bit of hunger will send me into a frenzy when I get home.  I've snacked so much by the time I sit down to dinner that I'm not hungry anymore.  I waited until I got my plate ready, and I felt way better for it.

I started my day off with a run, which is something I'd like to do consistently.  I've been doing the couch to 5k plan, but I went ahead and started over, wanting to work on my speed.  I also signed up for the Little Rock Half Marathon!  I ran this race in 2011, slowly, and had a good time training.  I'm excited about getting back into longer distance running.  I know I have to temper the new long workouts with how much more it makes me eat.  It will be a give and take, but I'm excited.

After my run this morning, I whipped up a protein shake.  I will be starting most mornings this way, because it makes me feel good after my run.

I packed up some cereal as a real breakfast, but after I got into it, I wasn't that hungry.

I think I'll try to do a protein shake, followed by a smoothie for mid-morning.  That way, I won't be starving by lunch, which I was.  I packed almonds and a bbq eggplant sandwich, which was delicious but didn't exactly fill me up.  I had some trail mix mid-afternoon.

I headed off to Kroger after work to pick up some groceries, mostly fresh foods.  I do love grocery shopping.  I knew I wanted to mix up a bunch of food for the rest of the week.

When I got home, I broke out the new Nikon (Ms. Nigella) to try and take some pictures of dinner.  I'm definitely still getting the hang of it, so I know these are a work in progress.  Dinner was leftover Jambalaya from my parents' house.  I had it with green beans, home made bread that my Dad made, and earth balance.  Dinner tasted better because I didn't snack while I was making it!

I'm definitely still getting the hang of lighting, my lenses and the actual camera.  It definitely takes better pictures than the iphone!  

I also made up some kale chips and bbq tempeh for lunches.  Yum!

Bodhi made her way into the kitchen and wanted to help!
