Vegan Mofo Daily Eats: Pacman Sandwich!

Anyway, I meant to write this up last night, but time got away from me.  The day was good, and I'm feeling EXCELLENT eating smaller meals.  I feel lighter and far less bloated.  Why haven't I always been eating like this???

I listen to a lot of comedy podcasts, and one of my favorites is The Judge John Hodgeman Podcast.  People call in with disputes, and he mediates them.  Today's deals with weight loss, and his conclusions about diet were some of the most logical I've heard in awhile.  Take a listen to Weight, Weight, Don't Judge Me.

Josh and I started our day off with a run.  We're now both signed up for the Little Rock Half Marathon in March.  I was so incredibly excited that I started bouncing around the house!  We have been together for 8 years, but it's only recently that we've really started working out together.  It's fantastic.

So, after our runs, I thought I'd be fancy and make myself a nice veggie drink.  I got out coconut water, vegetables, and blended.  Ugh.  I should have thought this out a little better.  It needed some coconut oil or SOMETHING to not make it taste like dirt.  I only drank about 4 ounces and gave up.


Do not try this at home.  Was not good.  I really like making pulpy juice in the vitamix, but this just needed something extra.



I also forgot to scoop the frothy juice stuff on top off, which made it hard to drink.  I will regroup and rethink this and come back with something better.

Lunch was a home run, though.  I made up a tempeh, hummus, relish, romaine sandwich (that got rather flat in my lunchbox) with kale chips.  I thought my sandwich looked like it was trying to eat the kale chips.  Too bad I got to them first!  mwhahaha!





I also had some iced coffee + soymilk.  Yum.  Unfortunately, I was then up until 1 am.  I have to stop drinking coffee after noon.

Work is busy and the day went by pretty fast, and somehow after doing a bunch of errands after work, it was 9 pm before we thought about dinner!  I whipped up a really quick tempeh + guacamole wrap and had it with some veggie sides.  Nothing fancy, just yummy!



My sriracha makes it look like my burrito has been stabbed!!  My kale chips turned out so amazing that I think it will be a weekly staple!



After eating so well all week, I did reward myself with a little red wine.   Yum!


These two lulled me into some couch time cuddling!  Bodhi was pretty exhausted.  She must have been outside on the lookout for our pack of raccoons!



Out in Vegan Mofo Land....

I really want to make these buns!  They would be perfect with mini-black bean burgers.
I don't need to be eating cookies, but these look pretty fantastic!  Maybe just one....

We're headed to Fort Smith for some family time and a baby shower this weekend, but hopefully I'll get to go to Pho Vietnam for the best tofu bahn mi I've ever had!  They're about $3 of heaven.  I probably won't be posting much through the weekend, but I'll have a mofo recap on Sunday!

  1. I need more info on these kale chips. Did you bake them? Are they store bought? I usually juice large amounts of kale but lately I have been slacking on juicing and end up with at least one bunch going to waste.

    1. ok, so i don't really have a measured recipe, as that is not my strong point, but here's how the kale went:

      grab 1 large bowl
      add about 5 big handfuls of kale (1/2 the precut bag i usually buy)
      add about a tablespoon or two of olive oil. just enough to lightly coat, too much and they'll get soggy.
      add 2 heaping tablespoons of nutritional yeast
      add 2 tablespoons of pumpkin seeds
      crack in some seasalt and pepper

      i baked these in the oven at about 400 until they got brown on the top parts. i let them cool and divided them up into about 5 containers (lest i eat the whole pan right there)

      there is one left calling me from the fridge.... haha
