Non-optimal Eating


Today, I let stress get the best of me, and I ate kind of crappy.  I had a stressful morning, after working on a project all weekend, and by the afternoon I was exhausted and wanted cake.

I did run this morning, but I followed it up with carb overload for breakfast.



For lunch, after finally finishing what I've been working on for months, I went to Tropical Smoothie with my sister.  I tried their noodle bowl with beyond meat.  It was ok, but it kind of felt like an instant meal.  I'll probably not have it again.



So, I went to Whole Foods for some cake.  Mm... cake.


After work, I had my camera class, which was fantastic.  I came home to a glass of wine and a bowl of noodles, tofu and veggies.


Quick and Easy Noodle Bowl

Ingredients:

2 cups spinach
1 cup cooked brown rice noodles
1/4 avocado
1/2 cup chopped, baked tofu (I used wildwood)
1/4 cup chopped carrots
1/4 cup chopped bell peppers
2 tbs soyaki sauce
1 tsp sriracha

Assemble and chow down!



Got to head to bed so I can get up and run all these carbs off!  Everyone has an indulgent day every now and then.
