Labor Day: Mama V's Luau



For my mom's birthday last year, I got her a subscription to Vegetarian Times.  As I've said before, my parents are not vegan, nor vegetarian, but they love good food.  My mom gets so excited to make yummy things for me every time I come home.  She's wonderful.

So, when I told her I was coming home for my birthday, she told me about this amazing luau she saw in the magazine.  To my surprise, that's exactly what I was going to ask her to make.  These recipes looked so amazing together, and I really wanted to try them.

We prepped the tofu the night before and let it sit in a bag overnight.  It was the best tofu dish I've ever had.  Like I've said before, Mama V knows her way around a block of tofu!


I had so many fancy pics from that night, that I thought I would condense them all for you.  Mom made up the marinade, put it in a bag and put it in the fridge overnight.






Not pictured is the portabello poke.  OH MAN.  That was delicious.  Mom served that to us while we were out on the patio earlier in the day, and I was too hungry to snag a picture.

    1. I am :) my mom instilled in my my love of food, and i think she gets incredibly excited to experiment with vegan stuff.
