Friday afternoon, we headed to my parents' house in Osceola. My sister and her boyfriend headed that way around the same time we did, with their puppy Bota. None of my family are vegans, but they're incredibly supportive (even if my dad gives me a hard time in jest). My mom gets super excited about cooking for me, and Friday, she had jambalaya ready to go.
Before we headed out, I had a rice bowl for breakfast and a sandwich for lunch. I am also in incredible need of a haircut! I ran to Kroger to grab a few things my mom needed, then we headed out of town.
Once we got to Osceola, my mom was ready to hand me a beer and make me a delicious dinner. Mama V is the best!
The jambalaya stock was made up by the time I got there, but it's veggies, rice and lots of tomatoes. We steamed up some tempeh and threw it in the pot. It went great with hot sauce and Earth Balance.
We opened presents and sat down to dinner! I got a tripod and a camera bag. I have the best family.
