A Stacked, Sexy, Vegan...... sandwich!

Daaaaayyyum.  That is a stacked sandwich!  It was so incredibly delicious.  I'll get to the recipe in a minute, but first, sorry for the iphone pictures.  With everything going on today at work and my impending surgery tomorrow, I didn't feel like busting out the nikon.

We woke up pre-alarm around 5:30 and decided to just go ahead and get up and run.  I had a quick, almost 2 mile run in under the time I usually do it.  Honestly, I was just ready to be done with the run.  Sometimes it comes easy and sometimes it's labored.  Take it one day at a time.

I have been reflecting on my fitness and nutrition lately, and I'm really happy.  Because I am doing things that I love (yoga, running and hiking), I never feel like I have to go and do a "work out."  It comes a lot more easily, and I do it more often.  So, find stuff that you love.

After my run, I made a MASSIVE tempeh scramble burrito and ate it at work.  That bad boy kept me full until after my haircut (at the Chop Shop, loooove this salon), so I didn't end up eating until almost 1:30.

Ok, so let's get to the sandwich!


Ingredients from Bottom to Top:

1 slice whole grain bread
1 tsp green olive tempenade (I used Kroger brand)
1 slice daiya provolone cheese slice
1 layer roasted red pepper
1 layer romaine lettuce
1 tsp walnut puree
1 layer thinly sliced green bell pepper
2 tsp Earth Balance Mayo
1 slice whole grain bread

Assemble and enjoy!  It's filling!

That is one sexy sandwich.  I plan on making it again this week and getting some good photographs of it.  Yum!

After work, I tried out Barefoot's intermediate/advanced class (with my new lululemon mat), and it was amazing.  I was worried that it would be too advanced, and while it was incredibly vigorous, I think it was just the right level of difficulty to expand my practice.  This weekend, there are a bunch of free classes because of Yogathon Arkansas, so check out their site for locations/times.

When I got home, I knew I needed something loaded with protein that would keep me going until after surgery tomorrow, since I can't eat after midnight.

I also wanted something fast, so I assembled what we had in the fridge/freezer.  I had a meal on the table in 5 minutes flat!

So, I won't be blogging at all tomorrow as I will be pretty loopy, but I'm going to try to keep things going on a regular posting schedule for the next few days.

Look forward to the weekend, because there is an onslaught of pumpkin recipes on the blog-o-sphere this week, and I have a reason to jump in.  My friends are having a birthday party at their new fire station (yes, their house is a fire station, super cool), and I'm making an Eggplant, Sweet Potato Chili with notes of Maple Beer and, yes, PUMPKIN.  (I might throw in some pumpkin pancakes for good measure.)

    On working out: I have a stress fracture and can't run for now (sadness), but I've been working in more yoga (and I love it!!). I'd forgotten how much I love yoga.

    1. i hope your stress fracture heals quickly. i know you were training for that half. it sucks when you work for something, then get injured. when i trained for the lr half a few years ago, i basically destroyed my feet. i have better shoes now, and i'm hoping to stay relatively injury free.

      yoga is the best!
