A Day in the Life of a Vegan MoFo!

Awhile back, I did a post about what a day in the life of an intern architect was like, so I thought I would do another one for Vegan Mofo.

5:45 AM   Wake up to Bodhi knocking over a bunch of stuff on our dresser.  Tell her to get down and commence with cuddling her.

6:00 AM   First alarm goes off, hit snooze.  Cuddle Josh for 10 minutes and talk about running.

6:10 AM   Get up, get laced up, drink a glass of water.

6:15 AM   Hit the pavement, get in a couch to 5k training run, around 2 miles.

6:45 AM  Get back to the house, stretch while watching the news.  Eat an English Muffin.  Make my lunch.  Jump in the shower.

7:30 AM  Head to work.

8:00 AM  Get to work, get settled in, get a cup of coffee and check emails.

8:30-11:30 AM   Most days, I do a variety of job tasks, but I'm working on a project with a big deadline, so I'm working on details.

11:30-12:30 AM  Check blog emails, check other vegan mofo stuff.  Eat lunch!  (Chickpea Salad with kale and an apple).  Read a few chapters of Game of Thrones.

12:30-5:30 PM  Back to details.  Spend all day coordinating details with wall sections, arguing with structural engineers and getting generally stressed out about looming deadlines.

5:30-6:00 PM  Leave the office, head downtown to Barefoot Studio, head into my lunar yoga class, get settled in.

6:00-7:30 PM   LUNAR YOGA!  One of my favorite classes.  Completely relax from the day.  Spend a little time after class talking with the lovely teacher.  Feel generally wonderful.

8:00 PM   Get home, give Josh lots of hugs, try to find the cat.  Decide on a quick dinner and get to making it while watching The Daily Show.  Set up camera shots (which I am generally not happy with.  I need to find better lighting for night shots.)  Take pictures.  EAT!

8:45 PM  Head into my home office, put on an episode of Mad Men for background noise, and edit photos.  Pull together blog post.  Surf the internet.

9:30 PM  Settle into hot bath and read a little more of Game of Thrones.

10:30 PM  Play with Bodhi, settle into bed, lights out!

That's my typical Wednesday.  I know a lot of people on the Mofo roll have been doing a What I ate Wednesday, but since I do that every day just about, I had fun giving you a break down of the day.  It does seem kind of busy.  I sometimes have to schedule down time, and I'm not proud of that.  I just seem to always be adding more activities/hobbies to my schedule.

I am droooooling over these savory cupcakes!  I want to try them all:  Taco and Eggplant!  There is even a mouth watering sweet one!
I really want to try these homemade refried beans.

Perhaps the thing that made my eyes pop out the most was this Tempeh Scramble!  I make tofu scramble quite a lot, but this will be my breakfast next week.

    1. it was a block of firm tofu, sriracha, spicy mustard and a little olive oil blended in the vitamix. yum!

  2. I like your time diary! I love Earth Balance, especially the soy-free butter (it doesn't upset my stomach). Your lunch looks fantastic.
