Tofu with Roasted Vegetables

So, yesterday, I threw myself a little pity party.  This week has been very stressful, and when I get stressed, I get down on myself.  I think it all boils down to the fact that I had big goals at the beginning of this year, and I wanted to be at a certain place by my birthday.  I'm not there.  However, I have accomplished a lot of things since starting the blog, and I want to focus on the positive.

  • Started and continuously kept up with this blog
  • Kept up a continuous yoga practice
  • Started running again
  • Had days where I had over 1000 readers!
  • Focused more on art work!
  • Have been in talks about doing my first mural
  • Met lots of lovely people through comments on here
  • Learned how to make vegan sausage!
  • Got one step closer to being an architect, and dealt with a little failure
  • Had a real moment of self acceptance
That last one was probably the highlight of the year, and although I haven't felt that happy all the time, I hadn't had a moment like that in a very long time.  It's a glimpse of what's to come if I keep taking care of myself.  So, I won't beat myself up about not losing even a clothing size.  I have gained a lot of understanding about myself, and I'm happier than I have been in years.

Things seem to be progressing a lot on the art front, and I've had a lot of inquiries lately about paintings.  While I'm a bit backed up, I started a Facebook Page where I will be posting updates, ways to see prints and new paintings online, and eventually even a place to purchase new things.  I post to my Vanishing Veggie page often too, so now I have to figure out how to keep up with both.  Oh social media.  

Anyway, enough self reflection. What did I eat today?!  Work was super stressful, but I kept it healthy.  I skipped the option to eat out with my co-workers, although I was tempted.  I opted for my healthy lunch instead.  I even found time between working late and getting ready for guests to make up a healthy dinner!  I didn't really do a good job tracking calories today, but that's a battle for another time.

My girlfriends are coming into town for Birthday Festivities, so I'll have a huge recap for you on Sunday.  My actual birthday is Tuesday, but I'm the kind of person that celebrates a week before, so it should be a good time.  On the schedule:  healthy taco night, yoga, hiking, picnic, Rock Town Distillery Tour, dinner at Lilly's Dim Sum and some Pinnacle Mountain climbing.  My mom is also throwing a huge luau complete with Vegetarian Times recipes for Labor Day, but there will be plenty of time to get excited about that next week!


  1. This is a good idea - to step back and look at the big picture. We really should remind ourselves of what we've done, not just what's left to do. I'm making my list now.
