Heirloom Tomato Gazpacho


I am so not feeling my best this week.  I slept all day yesterday because of a horrific migraine, and I haven't been in the best state of mind.  I'm feeling a bit down this week, and I can't quite put my finger on it.  I'm a bit down on myself, because I have been going 5 lbs up, 5 lbs down for months now with no real progress.  I usually don't let things like that bother me, but I'm bothered.  I'm nowhere near where I wanted to be this year by my birthday (next week), and it's got me down.

Ugh.  Enough of that.  I can't stay in this negative mind set, because it's toxic and bringing me down.

So, I don't have a lot of food logging for you, because I've been doing more sleeping than eating, but I do have a recipe from this weekend.  I have been eating this yummy, spicy gazpacho all week, and it's good.  I honestly did put the ingredients together without constructing an exact recipe, but I'm going to give you a rough outline to start with.  You should add the secondary ingredients to taste.

SPICY GAZPACHO
(the spice comes from the onion and garlic)

Main Ingredients:

  • 5-6 large heirloom tomatoes (in blender)
  • 5-6 small red/orange/yellow bell peppers (in blender)
  • 1/2 bunch cilantro (in blender)
  • 4 chunks whole wheat bread, soaked in water 10 minutes (in blender)
Secondary Ingredients:

  • 1/2 red onion (in blender)
  • 4 garlic cloves, chopped (in blender)
  • 2 tbs olive oil  (add in mixing bowl)
  • 2 tbs balsamic vinegar (add in mixing bowl)
  • zest of one lemon (add in mixing bowl)
  • juice of one lemon (add in mixing bowl)
  • generous amount of salt and pepper (add in mixing bowl)
  • rough chopped cilantro (add in mixing bowl)
  • 4-5 small red/orange/yellow bell peppers chopped (add in mixing bowl)
  • 1-2 additional tomatoes, rough chopped (add in mixing bowl)



The key is to get a nice base blended, and then it's good to add in some more veggies to give it a chunky component.  You could add hot peppers to make it spicier, but the raw onion and garlic made it spicy enough for me.  This is meant to be played with, so have fun!

Here's a snap show of food today.  I haven't been tracking well, because I've been feeling so low.  I ended the day with Mexican food, which is my go-to depressed food.  I'm off to clean the house, which will hopefully make me feel better.  blah.

On Scribbly Brain, I posted some sketches about the mural I'm working on.  I submitted my proposal, so we'll see what happens!








Hopefully, I will get it together this week and be happier in the coming days.  I really am very excited that we have a lot of birthday festivities going on this weekend, and my girlfriends are coming to hang out.  Everyone gets in a funk, and the best thing I can do is go for a run in the morning and try to knock it out.

  1. Ups and downs happen, but I see what you mean. I think for me the only thing that really works is to find the right strategy and apply all my dedication. A few months ago I lost my 6 pounds but then relaxed my regime and gained them back.
    I have just restarted the dieting motor this month and I am in the second week of an exercise routine (spinning, core, dynamic yoga and soon weights) and a partial juice cleanse (juice for two meals plus one solid meal per day). Yet, my weight is not moving yet, which is extremely frustrating. It is in moment like these I have to remain mindful and focused. Perhaps you just need to make some impactful changes which will make you want to carry on.

    1. i completely agree. i will be more rigid for a few weeks, lose a little weight, feel really good and relax my routine. it keeps me in a cycle. i also think that the weekends are completely screwing with my progress. from friday to sunday, i don't really track, and I eat recklessly. moving forward, i know weekends will be my biggest challenge, but if i really want to make some positive changes in my life, i must be more focused! no more standing in the closet crying because my clothes don't fit!
