Easy Vegan Stirfry Dinner

Sometimes, when you eat something bad, you gotta come home and eat something good.  Today, I let stress eating get to me.  The day started off well enough.  I grabbed a prepackaged smoothie because I had to leave the house early.  I don't usually buy these, as they're a bit chalky, but they work in a pinch.

Mid-morning, I was needing a snack, so I grabbed some trail mix.  I had a sandwich and some nuts for lunch, but deadlines, frustration and stress led me to give in and go with my co-workers to lunch.  I do enjoy sitting and talking with them, but I really have a lot of control issues in restaurants.

Oh Mexican food, why are you so tempting.  I tried not to just completely go nuts.  I knew after that I needed a quick and healthy dinner.

So, I know this isn't exactly a recipe, but it's an inspiration if you are wondering what you need to make for dinner.  I am extremely fascinated with what busy people eat for dinner.  I wish there was more of that out there.  This is what we had..

I've never had those fake chicken strips before.  They were an impulse buy at Kroger awhile back, and they weren't terrible.  I would use them in a pinch, but I'm trying to keep that kind of processed food out of my diet for the most part.

As you can see, I really just steamed everything, threw it in the pot, added cilantro, juice from a lime, a few tablespoons of nooch and a few cracks of sea salt.

We had some leftover taco shells, so I got it in my head to make some scooping utensils.  It was quite delicious.

We have family festivities all weekend, including a luau for my birthday with my parents.  Also, I start my Vegan MoFo posts on Monday, so there will be lots of pictures and fun stories!  My theme for MoFo is CONSISTENCY.  It's my theme for this year, actually, but I'm taking it one step at a time.  Today wasn't the most consistent day.  I'll also be trying to point out other post that I find inspiring from other MoFo'ers.  I'm very excited.

  1. Consistency is so hard, really. I'll do awesome all week, and then Thursday evening hits, and I start using that self-talk about how hard I've been working all week at being "good" and how this one night, that late-night treat/drink won't be so bad. And before I know it, it's Saturday night and I'm drunk and scrounging around for ANYTHING to eat. And then I spend all day Sunday detoxing and setting goals for the week. Again. So I guess I'm consistent, but not in a good way.

    I hope this new month can be a reset button for you! And me, I'll admit it. Your dinner looked delicious, by the way! Although I'm not one for the processed "vegan" stuff. I understand cooking in a pinch.
