Amazing Tempeh Pita


Today was a great day.  I woke up so incredibly sore from my 2 yoga classes this week.  I guess my arms were not used to it, but it feels good to be sore from workouts again.

Breakfast



For some reason, we were running really late this morning.  We spent too much time making food and taking recycling out, so I had to scurry off to work.  I packed up a tahini quinoa salad and had it at work.  I love starting the day off with quinoa.  It gives you that protein punch, and I wasn't hungry at all until it was well into lunch time.

Lunch



I headed to Conner Park in West Little Rock and found a big seat to eat my lunch.  I actually walked across the street from my office, but it felt like a deadly game of frogger, so I will probably be using my car to get across next time.  Why does Cantrell Road have to be so fast and dangerous?

Lunch Salad


  • 1 PPK Sausage
  • 1/2 Zucchini, Shredded
  • 2 cups spinach
  • 2 tbs raw pumpkin seeds
  • 1/2 cup shredded carrots
  • 2 tbs Braggs Sesame Dressing



I turned on some Pandora and spent a good 30 minutes sketching.  This is an exciting project that I'll be working on in the next month or so, and I'm really excited.  More about that later, and I'll be documenting it more on Scribbly Brain.

Josh headed off to climb Pinnacle Mountain after work, and I headed home to play around in the back yard and make a delicious dinner.

I noticed that the fig tree was getting ripe, so I pulled a couple off.




Then, there was this magical little fig.  Yes, I think it looks like a butt hole.  I laughed about for hours.




Dinner

I wanted to make something really summer-y and delicious for dinner.  The weather was so nice outside, and I felt really happy.  I decided on a tempeh pita with some quinoa salad and a peach.

I have finally realized that the key to tempeh is to steam it first.  I have been cooking it for over a year without steam or water, and I have been missing out.  Dinner was too simple to give you a recipe, really, but I'll give you the step by step.  Believe me, this was fantastic.


First, I made up a sriracha mayo using a tofu mayo I'm testing for Going Vegan.  This would work fine with any vegan mayo, though.

Then, I added water to a pan, sliced and threw in the tempeh, and covered.



Once it had steamed for about 10 minutes, I drained the water and went looking for a sauce.





I added the sauce and cooked it down for about 10 minutes, or until the sauce is absorbed.  Then, it was time to assemble.  Pita + Mayo + Spinach + Tempeh + Carrots.  Done and yum!

I felt like this dinner was so yummy, filling and bright!  I am sure it will keep me full all night and help power my run in the morning.
