Vegan Richa's Crispy Orange Cauliflower

Before I show you this delicious recipe from Vegan Richa, I'll give you a run down on the day.  After our mega workout last night, I was pretty starving this morning.  I made up a breakfast salad with tempeh, spinach, olives, carrots and cashews.  Still hungry, I also tore into my almonds.

For lunch, the office headed over to Buffalo Grill in West Little Rock.  I ordered the guac salad, like usual, with jalapenos and black beans.  This salad is really filling, but I still had snacks before yoga.

As I've been having a lot of issues getting into a comfortable groove with food lately, Ashley's post at Never Home Maker really resonated with me.  One good thing that I really love about blogs and bloggers is the way we find common issues we're working through.  I read this post right before I headed to Lunar Yoga, and I got to meditate on it during class.  I spent the whole time working on an eating strategy that I will soon implement, one that's not too rigid and not too lenient.

When I got home, I was too sore and tired for my run, but I was ready to get cooking.  I saw this amazing Crispy Orange Cauliflower recipe on Vegan Richa, and I had to try it.  I don't usually fry things at home, but this recipe just had to be made.  I also threw in some tempeh blocks for extra depth and protein.  Josh loved this dinner, also.

Several weeks ago, Tasty Bites sent me a huge box of their pre-packaged meals to try.  Not wanting to deal with cooking rice as well as the cauliflower, I decided to microwave this flavor.

For a pre-made rice, this one was extremely fragrant and nice.  I'm not usually a huge fan of pre-packaged items like this, but this was good.  I think these would be amazing for camping or traveling.  One package was the perfect amount of rice for Josh and I to split, and it made a nice base for the cauliflower.  We also topped the dish with, of course, sriracha and sesame seeds.
