Mama V comes to Town



Wednesday morning, my mom came to town to take care of me after my hospital stay.  Feeling pretty good, I was able to hang out with her, watch some Masterchef, and talk about vegan cooking.  My family isn't vegan, but they're amazing cooks.  My mom picked up my new cookbook, Appetite for Reduction, and started flipping through the recipes.  She instantly put her sights on the zucchini black bean tacos, although she put her own twist on it.










She instantly started going through the pantry and fridge, figuring out what she could include.  After she found red lentils, she decided to make a nice daal to go as a side dish.


As I laid on the couch, I could smell all of these amazing flavors coming from my kitchen.  The most interesting, I think, was a strong smell of orange.  My mom found a lonely orange on the counter, zested it, and used the juices as flavoring for the zucchini tacos.  Yum!











I'm not sure how closely my mom followed Isa's recipe, but these tacos were delicious.  We had them on wheat tortillas with salsa verde and avocado.






The next day, mom tried another recipe from the same cookbook.  She fried some crispy tofu, made an orange glaze, and served it over savoy cabbage.  This dish was light, rich and yummy.





I'm very happy to have had my mom come and cook for me.  She couldn't stay very long, but she filled my fridge with fresh, home made dishes that I can warm up all weekend.

I'm healing pretty well, and I should be back to regular blogging on Monday.  I'm sure with all this yummy food, I'll be back to normal soon.

  1. What a cool mom! I really like Appetite for Reduction. The recipes are not only delicious and easy, they are lower in calories. - Glad you're doing ok, relax and heal!

  2. Ah, moms are the BEST!! I haven't tried either of those recipes from AfR, but I'll have to! The zucchini tacos have been on my list for some time. :-)

    1. Moms are the best! She is in Birmingham tonight on her way to Florida and just sent me pictures of an amazing looking quinoa veggie burger she had!

  3. Glad to hear you're done with all that surgery business. I look forward to seeing more recipes from Isa's magic book of wonders too!

    However you're choosing to heal, I hope it's working! Are you able to still do a little yoga in your place in the meantime?

    1. I badly need to. I have been pretty horizontal all week, and my body is aching to move. The medication I'm on makes it hard to stand for too long without getting dizzy, but I'm hoping to ween off very soon.
