Tofu Alfredo Veggie Bowl

Tonight's recipe is sure to give you a huge and healthy dose of your veggies!  I ACTUALLY got up this morning and rode the bike trainer for a half an hour, so the rest of the day I was pretty hungry.  I think that's the thing you really need to watch when adding a lot of exercise to a diet program.  I have been adding tofu scramble to my morning protein shake, which really seems to give me a good foundation for the day.  Because I'm having such a big breakfast, though, I'm usually waiting until lunch to eat.

I threw in some left over grilled zucchini from Saturday's BBQ.  I do love zucchini.

We went to Izzy's for lunch, and I got the asian salad.  I was a little disappointing that it was a ton of iceberg. Next time, I might ask for spinach.  I followed up my lunch with a snack of pistachios before I headed out for a school board meeting.  However, I was still hungry, so I snagged some trail mix from the vending machine.  Trying to stay low carb, I didn't eat any of the dried fruit.

When I got home, I decided to whip up another pasta type dish with the leftover Victoria Vegan Alfredo from sunday night.  I cooked penne pasta for Josh, but I wasn't wanting all of that starch, so I had my dinner on a bed of spinach.  The hot sauce wilted the veggies, so if you want something more hearty, go with the pasta.  The dish was still good though, I thought.

Tofu Alfredo Veggie Bowl


1 medium zucchini, chopped
3 small colored peppers, sliced
3 cups kale, chopped
3 cloves of garlic, pressed
1/4 block tofu, pressed and chopped
1 tbs olive oil
1 cup pasta or spinach
1/4 cup vegan alfredo sauce

toppings:  salt, pepper, sriracha, pumpkin seeds, or anything you like!


Heat oven to 350, bake tofu for 12 minutes - or - pan fry in skillet

Put water to boil, add pasta, cook for 10 minutes, drain

While pasta is cooking, heat oil in skillet, add garlic, cook for 1 minute, add chopped veggies

Cook veggies down, add kale, cover occasionally to wilt

Heat vegan alfredo sauce in sauce pan, stir often, let sit on very low


Place spinach or pasta in bottom of bowl, spoon over veggies, add tofu, top with sauce


I have a surprise project coming up that might actually happen, so I started working on that tonight.  I'm very anxious and excited about it.
