Recipe Redo and an Office Tour


Well, if the tofu stack didn't razzle dazzle you yesterday, then you're in for a treat tonight!  My recipe 2.0 was WAY better.

I didn't, however, have such good luck with my new pea protein.  I ordered a new one off of amazon, Now Foods Pea Protein, and mixed it with my usual coconut milk.  Ick.  No bueno.  It didn't dissolve, and it had a a funky taste.  I will probably keep it around to add to smoothies, but it's not something I can drink straight.


So, I went after my almonds pretty quickly.  There is a new restaurant that opened next to our office, J. Gumbos, which I believe is a chain.  Everyone wanted to try it, so we headed over to see what was on the menu.  They have three vegetarian chilis/gumbos and 2 are vegan (one had a lot of butter in it).  I had in mind to get the Cajun Ratatouille, because it was far less carbs and calories.  However, they were out.  I was bummed, but I went for the white chili, no rice.  It was really good!  It was a bit heavier than I needed to have for lunch, and I might have eaten too much french bread with it, but overall, it was very good.  I do want to see what their other vegan dish is like, but I know if I'm looking for a filling chili, I'll be set.




This kind of put me in a food coma.  I did, however, get into my olives for a snack.  For some reason, when I eat too much, it leads to more eating too much.



I was standing around my office, and I decided to give you guys a little tour.  So, here are a few shots of my office and office garden!








Yes, it's messy, but it's spacious and full of light.  This office is my first space with my own window, so it makes me pretty excited.

After work, I headed home to study (and snack).  Wine helps you study, right?




So, recipe 2.0.... I took the cooked eggplant and tofu from last night and warmed them up in the oven for a few minutes, then I sauteed some spinach in a pan.  I assembled the dish, and then I dripped a little goddess dressing and sriracha over the top.  I served this up with broccoli, and OMG, recipe success!!  The spinach really brought a new dimension to it, and I liked it a lot more than last night.




So, after a week of not really counting calories and eating carbs, I gained back 2 pounds.  I did eat 3 containers of ice cream, so I'm not really surprised.  When things knock me off track, I usually have a bit of a hard time finding my footing again, but I'm working on it.  This is a journey though, so I'm not really letting it phase me.  I'm trying to cultivate an overall happiness within myself, and getting mad about 2 pounds isn't part of that.  So, it was a good break, and now it's over.  I really do think that the negative loop we tell ourselves about food gets so deeply into our minds that it contributes to failure.  No more of that.
