Early Week Recap and A Small Break

This week has been so busy that I didn't even get a chance to recap Monday for you!  It's been a pretty crazy few days.  As I said last week, I'm having some minor surgery on Wednesday, so I'll be out of commission for a few days.  I'll be back to blogging regularly on Monday, if not before.  There is a lot of coconut milk ice cream in the freezer for me to eat for the next few days.

Monday Recap

Since I'm going to be out of work the later part of this week, I had to get tons of stuff ready for a presentation on Wednesday that I was going to miss.  So, I was not paying too much attention to food.  I had a protein shake for breakfast with coconut milk, and although the protein is not as high, MAN does it taste better and more smooth than hemp milk!  We went to Trios for lunch, which doesn't have a lot of vegan low carb options (read NONE), but I told the waitress what I was looking for, and she brought me a salad and some veggies.  This didn't really do it for me, though, so I cracked open my tofu scramble snack when we got back to the office and had that as well.

By the end of work I was starving and knew I would be working more that night, so I skipped yoga and went home to take a break and cook dinner.  On the menu:  oven roasted brussels sprouts with almonds covered in cashew cream sauce, plain baked tofu, and tamari stir fried eggplant/zucchini.  There was also a small piece of wheat bread.  This was so yummy.

I love cooking, but cooking dinner every night is overwhelming for me.  This took a good hour plus clean up, which is why I usually don't cook big meals during the week.  However, this night I needed a break, so it was fun.

Tuesday Recap:

Tuesday was EVEN BUSIER than before, and I barely even thought about food except that I needed large quantities.  I would not be eating again until Wednesday night, so I took this as an opportunity to eat the foods I usually don't get to eat.  This, I don't think, was such a great idea.

Lunch was at Bumpy's in West Little Rock.  I really liked this place when it first opened, but I think it's a little too heavy usually for me now.  Also, everything seems to have a smoke flavor to it.  I got the veggie fajitas and ate about 1/3rd, but I got my fill of their salty chips.  I didn't feel good again until about 7 pm.  I'm not used to eating heavy meals anymore, and I regretted this one immediately.

When I got home, Josh wanted to go to Big Orange, a local burger place out in the promenade in West Little Rock.  I like going out there, because we can walk around and have a nice meal.  We sat out on the patio, and it was lovely.  Big Orange is owned by the same people that run ZaZa's and Local Lime here in Little Rock, and they know how to make food.  I got their veggie burger with avocado, pickled green tomatoes and caramelized onions.  I wanted to try their salad, but the mustard dressing was WAY too spicy and the salad was nothing special.  Plus, there were weird chunks of romaine ends still left in the salad.  Messing prep like that bugs me, so I didn't really eat the salad.  I also got the sweet potato fries, because they come with curry ketchup (OH MY GOD SO GOOD).  All in all, it was a good, heavy dinner.  I was regretting such heavy choices all night, though.  I'm so glad I don't eat like this all of the time.  Give me kale and tempeh any day.

So, I won't be eating anything to special for the next few days or blogging about it, but I'll be back soon.  See you in a few days!


  1. Ooh, I'll have to tell my LR friend Sheridan about Bumpy's Veggie Burger. She lives in West LR. Hope your surgery goes well!

    1. Thanks! everything went great. Big orange has a veggie burger and a falafel burger, but tell them to go to bumpy's for some good texmex. their guac is amazing.

  2. We live right around the corner from where Bumpy's was and used to go there a lot! I haven't tried the new place in that location yet - Fonda's?

    Oh man, we had a sad, frustrating experience last time we went to Big Orange and haven't been back since. Sucks, because I really liked that place, but sometimes you just get burned, you know? But, we should give it another shot sometime. We really like eating in the Promenade and then walking around (and checking out Anthropologie!) afterward too. I think A.W. Lins is probably our new favorite restaurant out there.
