Sauteed Eggplant and Zucchini Salad


Today was a normal day.  Work is going really well, and although I was tired, I still headed to yoga.  I did, however, let myself get too hungry by dinner, so what you'll see below was quickly thrown together, but still delicious.

Breakfast was the usual.  I'm really liking the hemp milk + pea protein.  It's something I can easily drink right when I get to work, and I go for a more solid breakfast around 10.



For lunch, we loaded up the office and went to Izzy's.  There are a lot of vegan options, as I've said before, but it's tricky being low carb and creative.  I ordered their small greek salad, avocado instead of goat cheese, olive oil on the side, then I added their steamed veggies. Throw it all together and you have a pretty good salad.  This didn't really keep me going, though, and I was starving by dinner, even with snacks.




I had to go to a job site in the early afternoon, so I brought my snacks with me.  Unfortunately, they leaked pickle juice all over my car.  Oh well, between my bike and all my workout crap and post-hot yoga sweat, my car probably needs a good scrub down.



I got home around 9 and quickly sauteed some eggplant and zucchini in olive oil and balsamic.  I put it over spinach with pumpkin seeds and goddess dressing.




What's not pictured is the 2 spoonfuls of peanut butter that I ate for dessert.  I was really craving something sweet.  I feel I'm getting in a bit of a food rut and I need to find more foods that I can eat in this style.  It's working though, and I feel really light.  When I eat bread or drink beer, I'm super lethargic and gassy again (that was pretty much a constant state for me before).  So, I just need to find more things to go along with my salads.
