Low-Carb Tofu Scramble

Well, day 1 of this little low-carb experiment went really well.  I was actually amazed at how full I felt all day, and I found it difficult to reach 1200 calories.

As promised, here's my low carb tofu scramble recipe, which is what I had for breakfast (pictured above):

Low-Carb Tofu Scramble

1 teaspoon olive oil
1 container soft tofu
1 bag frozen broccoli/cauliflower mix
1 bag frozen green beans
4 tablespoons of nutritional yeast
3 cups of raw kale
1 tablespoon tumeric
1 tablespoon cumin
1 tablespoon paprika
salt and pepper to taste

So, I heated up a little oil and crumbled the soft tofu in.  I like to use soft in scramble sometimes, because to me, it feels more like eggs.  I cooked the tofu down with all of the spices for about 10 minutes, then I steamed and added the veggies.  I let this all cook for another 10 minutes, then I let it cool.  After it cooled, I divided it into 8 pieces of tupperware.  For me, if I divide out my portions first, it makes it easier to grab it and go AND not over eat.

So, breakfast was amazing, and snacks for the day were good as well.

I tried the Lite Organic Goddess Dressing at Kroger.  While the full calorie one has a better consistency, they're both really good.  I found these snacks incredibly filling, much more than fruit.  I made sure to take all of my vitamins since I have cut out a lot of fruit for now.

For lunch, we went to Buffalo Grill.  We used to go here ALL the time, but now not as much.  They have a veggie burger and a guac salad on the menu that I alternate between, but sometimes I just do salad and a baked potato.  Today I got their guac salad without the tortilla chips.  I usually add beans, but I didn't today because of the carb thing, and I was already pretty high on the protein count.

This salad has really improved over the years.  It used to be on shredded iceburg, but now they have it on actual romaine and spinach.  I really enjoyed this.

We got some insane storms blow through, so I decided to skip yoga.  It didn't turn out to be much, which I suppose is a good thing.  Around 7, we decided to make dinner.  I piled up a salad and decided to have another serving of tofu in some savoy cabbage.  

A diet that lets me eat mushrooms and olives all day?  SIGN ME UP!  Like I said before, I was completely satisfied all day.  Day one, success.
