Mama V's Vegan Food

My mom is great.  She is the best hostess, and when we come home to visit, she makes sure that I always have a ton (too much?) to eat.  I'm the only vegetarian in the family, let alone vegan, so there's usually something different made for me.  I got home Friday, and the fridge was STOCKED with vegetables, fruit, vegan sausages, and tofu.  My mom has shared with me a few recipes that she made this weekend for my readers.


4 tomatillos, washed and quartered
4 cloves of garlic
2 poblano peppers, de-seeded and sliced in strips
olive oil
salt and pepper to taste

Preheat your oven to 400 degrees.  Lay out your chopped veggies on a baking sheet (here we used a stone).  Drizzle with olive oil and salt and pepper.  Cook until roasted.

Every 10 minutes or so, my mom would check the veggies, flip them over, etc.

Once the peppers are roasted, remove the skin of the poblanos.

Pulse everything in the food processor, add more salt, pepper or olive oil to taste.  This was AWESOME!


1 block extra firm tofu
teriyaki miso dressing
peanut dressing
soy sauce
chopped ginger
chopped garlic
rice wine vinegar
1 bag stir fry vegetables
olive oil
salt and pepper to taste

Cut tofu into squares and lay out in a baking dish.
Wrap in paper towel and press for several hours.
Make up marinade using miso teriyaki sauce, peanut dressing, rice wine vinegar and olive oil.
Marinate tofu for several hours.




We let this sit most of the afternoon, then my mom baked them in the oven until they were CRISPY!

Then, she fired up the wok and some olive oil and stir fried a bag of veggies for several minutes.  We even threw in some sesame seeds for good measure.

Finished product.  MAN!  This was good.  I had a second helping when everyone else was eating the non-vegan birthday cake for my dad (that I decorated).

Yep, that's exactly what you think it is.  My dad deserves a classy cake.

  2. If you don’t mind making aubergine recipes tonight then you should roast it instead. Aubergine has been said as one of the healthy recipe that you should eat, try it and you will make it multiple times.
